Healthy Meal Planning:  Salmon Cakes with Avocado Sauce, Prosciutto & Crab

Ingredients

For the Salmon Cake

  • 8 oz Salmon
  • 1 Tbsp Worcestershire Sauce
  • 1 Tbsp Melted Vegan Butter
  • 1 Tbsp Egg Replacer + 2 Tbsp of water (Mixed together)
  • 3/4 Cup Gluten Free Bread Crumbs
  • 2 Tbsp of fresh parsley

For the Avocado Sauce

  • 1 Pitted Avocado
  • 1 Tbsp Fresh Cilantro
  • Juice of one Lime
  • 1 Tbsp Garlic
  • 1 Tbsp Onion
  • 2 slices of proscuitto
  • 1/4 Cup of Crab meat

Directions:

  1. In a small dish, mix all the Salmon Cake ingredients, break up salmon pieces.
  2. Gently mix with your hands until all ingredients are blended
  3. Form two salmon cakes and let sit in the fridge for 2 – 4 hours
  4. Preheat oven to 350 degrees
  5. Place patties on a pre-sprayed baking sheet
  6. Cook at 350 for 20 minutes
  7. While salmon is cooking, place all the ingredients for the avocado sauce in a Ninja (or blender) and mix together

When salmon is finished cooking, top with avocado sauce, one slice of proscuito each and crab meat.
